Chorizo Cupcakes
- 1 teaspoon turmeric
- Espelette pepper
- salt
- 1 teaspoon baking powder
- 9/16 cup melted butter
- 2 eggs
- 1 cup flour
- 3 1/2 ounces chorizo diced
- 4 ounces cream cheese
- 1/2 bunch chives
- ground black pepper
- Preheat oven to 425 degrees Fahrenheit.
- In a bowl, mix the flour with the salt, turmeric, baking powder, and Espelette pepper.
- In another bowl, whisk the eggs with the butter.
- Make a well in the flour and pour in the egg and butter mixture. Mix well and then add the chorizo. Divide the dough into small molds or cupcake trays and bake for about 20 minutes.
- In a bowl, mash the cream cheese with a fork.
- Finely chop the chives and mix with the cream cheese. Add pepper to taste. Fill a pastry bag and decorate the top of the cupcakes once they have cooled.
