Sweet Potato Brownies

  1. Line a small, square baking pan with parchment paper. Set aside.
  2. Peel the potatoes, cut into cubes and cook for about 20 minutes until tender.
  3. Place the potatoes and dates in a food processor and puree until smooth.
  4. In a bowl, place the remaining ingredients and add the puree. Stir well.
  5. Place the batter into the prepared pan. Smooth the surface with a spatula.
  6. Bake in a preheated oven at 350u0b0F for about 20 minutes or until a toothpick comes out almost clean.
  7. Allow to cool for about 10 minutes before unmolding.
  8. Cut into squares and sprinkle with cocoa powder if desired.
