Babamisu

  1. Preheat oven to 180 degrees Celsius.
  2. Separate the eggs.
  3. In a medium bowl, with an electric mixer, beat the yolks with sugar until the mixture is pale.
  4. Add the milk and oil. Mix well.
  5. Add flour and baking powder .
  6. Beat the egg whites with salt and gently add to the dough.
  7. Grease the cupcake tins and fill with the batter up to 2/3.
  8. Bake the babas for 20 minutes.
  9. While tha cakes bake, make the syrup. In a small saucepan combine coffee and sugar. Cook over low heat to dissolve the sugar without boiling the coffee. Add the marsala.
  10. Unmold the cakes while hot and quickly brush them with hot syrup.
  11. Cover and let soak them for at least 8 hours.
  12. Separate the remaining 2 eggs.
  13. Mix the mascarpone with vanilla, sugar and egg yolks.
  14. Beat the egg whites until stiff and fold them gently to the mascarpone mixture.
  15. Fill the center of the cakes just before serving, sprinkle with a bit of cocoa.
