Chocolate Chip And Pomegranate Muffins
- 1 cup wheat flour
- 1/3 cup spelt flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2 eggs
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 2 tablespoons greek yogurt
- 100 milliliters oil
- 3 bananas ripe
- 1 lemon juice and zest
- 80 milliliters milk
- 100 grams dark chocolate chips
- 2 tablespoons berries pomegranate
- Preheat oven to 180 degrees Celsius.
- Mix and sift flours, salt, and baking soda in a bowl, set aside.
- In another bowl, whisk the eggs. Add the brown sugar and stir until obtaining a homogeneous mixture.
- Pour in the vanilla extract, then add the Greek yogurt and the oil.
- Mash the bananas, and mix with lemon juice and zest.
- Mix the flour mixture with the mashed bananas and milk. Stir well until getting a creamy mixture.
- Gently stir in the chocolate chips and pomegranate berries.
- Pour spoonfuls of batter into cupcake pans without filling completely.
- Bake for 15 to 18 minutes.
- Let cool before unmolding.
