Spicy Summer Chicken Skewers
- 2 tablespoons cumin
- 2 tablespoons cinnamon
- 2 tablespoons turmeric
- 1 teaspoon saffron threads
- 30 green olives
- 3 tablespoons olive oil
- 6 5/8 tablespoons chopped almonds
- 2 lemons
- 3 tablespoons coriander chopped
- 6 chicken breasts
- Mix cumin, cinnamon, turmeric and saffron threads in a dish.
- Add the olives, olive oil, and almonds.
- Rinse the lemons and cut them into segments.
- Add them in the dish with coriander. Mix marinade well.
- Cut the chicken into medium sized cubes, and add to marinade. Mix so that chicken pieces are coated with the marinade.
- Marinate for 4 to 8 hours.
- Preheat oven to 240 degrees Celsius.
- Prick pieces of chicken on skewers, alternating with olives and lemon.
- Bake for 15 minutes, turning the skewers.
