Butter Cookies
- 1 5/8 cups flour
- 1/2 cup almond flour
- 7 tablespoons butter
- 2/3 cup powdered sugar
- 1 tablespoon cognac
- 7/8 cup dark chocolate
- Add the flours, butter in pieces, sugar, and cognac. Mix until a dough forms.
- Shape the dough into a ball, cover it with plastic wrap and refrigerate it for 40 minutes.
- Preheat the oven to 160 degrees Celsius.
- Roll out the dough with a rolling pin to between 1 and 4 centimeters thick.
- Make some holes in the dough with a fork and cut the sheet into rectangles.
- Place the cookies on a parchment paper-lined baking sheet and bake for between 20 and 25 minutes. Remove from the oven and cool on a wire rack.
- Melt the dark chocolate in a microwave and dip the cookies halfway, then allow them to dry.
- Serve immediately or store in sealed container for a few days.
