Butter Cookies

  1. Add the flours, butter in pieces, sugar, and cognac. Mix until a dough forms.
  2. Shape the dough into a ball, cover it with plastic wrap and refrigerate it for 40 minutes.
  3. Preheat the oven to 160 degrees Celsius.
  4. Roll out the dough with a rolling pin to between 1 and 4 centimeters thick.
  5. Make some holes in the dough with a fork and cut the sheet into rectangles.
  6. Place the cookies on a parchment paper-lined baking sheet and bake for between 20 and 25 minutes. Remove from the oven and cool on a wire rack.
  7. Melt the dark chocolate in a microwave and dip the cookies halfway, then allow them to dry.
  8. Serve immediately or store in sealed container for a few days.
