Low Tide Chicken
- 1/2 c. pure olive oil
- 1/2 garlic clove (if you don't like garlic, use 1/4)
- 6 boneless chicken breasts
- 1 1/2 c. water
- 4 chicken bouillon cubes
- 1 tsp. thyme
- 1/4 tsp. salt
- pepper to taste
- 1 lb. fresh mushrooms
- 1 pkg. fresh spinach
- Heat olive oil in a large skillet.
- Saute garlic in oil. Flour chicken and lightly fry, then place in a roasting pan. Strain oil, saving approximately 1/4 cup.
- Pour oil back into pan and add the water, bouillon cubes, thyme, salt and pepper.
- Cook on high heat until water has almost boiled away.
- Then add mushrooms.
- Saute over a low flame for 10 minutes.
- Cook spinach until done, and drain, then put over chicken.
- Pour mushrooms and sauce over chicken.
- Place chicken in oven at 350u0b0 for 10 minutes and serve over rice.
- It will look like low tide on the beach if done correctly!
