Pork Ramen
- 1 teaspoon mirin
- 1 pound ramen noodles
- 1/4 cup bamboo shoots
- 1 cup baby spinach
- 1 sheet nori
- 1/4 cup carrots shredded
- 1/4 cup scallions sliced
- 3 pounds pork shoulder
- 1/2 cup carrots diced
- 1/2 cup celery diced
- 1 cup onion diced
- 1/2 cup ginger sliced
- 1/4 cup scallions sliced
- 1/4 cup soy sauce
- 1/4 cup garlic
- 2 star anise
- 1 cinnamon stick
- 1 1/2 gallons chicken stock
- 1. Put all ingredients in hotel pan along with pork shoulder and cook in 350F for 3 hours. Chop meat and reserve liquid for service
- 2. Mix soy, mirin, and vinegar and marinate eggs for 20 minutes
- 3. Cook the noodles according to the package
- 4. Place all garnish in bowl, chopped pork, and ladle over hot broth.Top with egg and scallions
