Easy Balsamic Roasted Vegetables

  1. Preheat the oven to 425F.
  2. Line a large sheet pan with parchment paper.
  3. Slice the peppers and onion into 1/2 inch squares. Separate the onion layers with your fingers for even cooking.
  4. Chop the sweet potato into 1/4 inch discs, and cut each disc into quarters.
  5. Crush and mince the garlic cloves.
  6. Finely chop the rosemary.
  7. Combine the olive oil, balsamic vinegar, salt, garlic and rosemary in a large mixing bowl.
  8. Add the peppers, onions and sweet potato to the mixing bowl, and toss to coat.
  9. Pour the seasoned veggies on to the lined baking sheet, and spread them out into a single layer. Bake for 40 minutes.
  10. Remove the sheet pan from the oven, and allow to the veggies to cool.
  11. Sprinkle with crumbled feta, as desired.
