Blackberry Smash
- 1 cup blackberries
- 1/2 cup water
- 1/2 cup sugar
- 1/4 cup lime juice fresh squeezed
- 4 blackberries
- 2 ounces bourbon
- 1/2 ounce syrup blackberry syrup from above
- 1/2 ounce elderflower liqueur St. Germain
- 2 dashes ginger beer
- To make the blackberry syrup: In a small pot combine the blackberries, water and sugar. Stir ingredients and bring to a boil. Remove from the heat and let cool for 4 minutes.
- Place in a blender and blend on high speed for 3 minutes. Strain mixture and then stir in lime juice. Refrigerate until ready to use.
- To assemble the cocktails: In each of two glasses, place two blackberries at the bottom and muddle until smashed and juice is extracted.
- Fill the glasses with ice, and then add the whiskey, blackberry syrup, St. Germain and stir for a few minutesnntil chilled. Finish each with a splash of ginger beer on top.
