Little Corn Flour Buns

  1. In a large bowl, combine the corn flour and boiling water.
  2. Mix and let stand for 10 minutes.
  3. In a small bowl, crumble the yeast and dissolve it with the sugar and 3 tablespoons of warm water, cover and let stand 10 minutes.
  4. To the cornstarch mixture, add flour, salt, yeast, and olive oil.
  5. Using the food processor, knead for 5 minutes. The dough will be very sticky.
  6. Let the dough rise for 1 hour until doubled in volume.
  7. Transfer the dough to a floured surface, knead it a little.
  8. Form small balls of dough.
  9. Transfer to brioche tins and let raise for one hour.
  10. Preheat the oven to 200 degrees Celsius.
  11. Bake for 20 minutes.
