Moist Blueberry Muffin Cake
- 3 cups flour
- 1 1/2 cups sugar
- 4 tablespoons light brown sugar
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2/3 cup buttermilk
- 2 eggs
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 10 tablespoons unsalted butter softened
- 1/2 cup oil
- 2 1/2 cups blueberries fresh
- vanilla glaze
- 1/2 teaspoon vanilla extract
- 1 tablespoon cream or milk
- 3 tablespoons flour
- 1/2 tablespoon granulated sugar
- 1/2 tablespoon brown sugar
- 1 pinch salt
- 1 tablespoon butter softened
- For the cake:nn1. Preheat oven to 350u0b0. Grease a 9" round springform pan or regular cake pan, set aside.nn2. In a small bowl, whisk together the flour, cinnamon salt and baking powder and set aside.nn3. In the bowl of your stand mixer, cream the butter and both sugars together until light and fluffy.nn3. Add in the oil, eggs and vanilla, and mix until combined and smooth.nn4. Slowly add the flour mixture to egg mixture on low speed and mix until just incorporated, you do not want to over mix the batter.nn5. Pour in the buttermilk and mix, still on low, until everything is incorporated and smooth. Batter will be very thick, you should be able to stick a spoon into it and it will stay upright.nn6. Fold in the blueberries by hand with a rubber spatula. Make sure you rinse them in cold water a few times until water runs almost clear-very light in color or cake will turn blue-green.nn7. Pour batter into greased cake pan and add some blueberries to the top so when it is done baking it doesn't look bare. Gently push them into the cake a bit.
- For the Crumb Topping:n.Mix flour, sugar, and salt in a bowl.nn2. Cut in butter with a fork or by hands until mixture is crumbly.nn3. Sprinkle over the top of the cakenn4. Place cake in the oven and bake for 25-35 minutes or until the top just starts to brown a bit and toothpick inserted into the center comes out clean.
- Vanilla Glaze:n. Combine sugar vanilla and cream into a small bowl and mix until smooth.nn2. Pour into a decorating bottle for drizzling.nn3. Once your cake is out of the oven and COMPLETELY cooled, drizzle cake with vanilla glaze and garnish with reserved blueberries. Cut, serve an enjoy!
