Coconut Oil Crunchy Peanut Butter Cookies
- 1 cup coconut oil
- 2 1/2 cups whole wheat flour
- 3/4 cup organic cane sugar
- 1 1/3 cups brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups natural peanut butter crunchy, unsalted
- Preheat the oven to 350 degrees Fahrenheit. Mix together the flour, baking soda, baking powder and salt in a medium bowl. In a large bowl, beat together the coconut oil and peanut butter using a hand mixer on low speed. Add the eggs and combine thoroughly. Beat in the sugar and vanilla. When fully combined, mix in the flour mixture using a wooden spoon or your hands. The mixture will be quite dense and thick. Roll into balls, place onto a baking sheet and use a fork to slightly flatten the balls while creating hash marks. Bake for 8 to 10 minutes.
