Satay Sauce
- 1 tablespoon olive oil good
- 1 tablespoon dark sesame oil
- 2/3 cup diced red onion small-
- 1 1/2 teaspoons minced garlic
- 1 1/2 fresh ginger root minced
- 2 tablespoons red wine vinegar good
- 1/4 cup light brown sugar packed
- 2 tablespoons soy sauce
- 1/2 cup smooth peanut butter
- 1/4 ketchup
- 2 tablespoons dry sherry
- 1 1/2 teaspoons lime juice freshly squeezed, I used 2 limes
- Cook the olive oil, sesame oil, red onion, garlic, ginger root in a small, heavy bottomed pot, over medium heat until the onions are transparent, 15 to 20 minutes.
- In a bowl whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry and lime juice.
- Add to the onion mixture and cook for 1 minute.
- Cool and use alongside the chicken.
