Pork Belly Cabbage Stew With Carrot Medley
- 1 cabbage halved.
- 1/2 pound bacon or smoked pork belly
- baby carrots
- 1 can cream of chicken soup low sodium
- 1 quart stock chick, low sodium
- 1 cup white rice
- 1 poblano pepper
- garlic powder
- salt
- To start put the chicken stock and cream of chicken soup (with 1 can of water) in a medium stock pot over high heat
- Add the baby carrots
- Chop the cabbage, I did a 1/4 dice with mine, add it to the stock
- Add the rice in as well
- Chop bacon (belly), again 1/4 dice is good, add it in
- Cover and let simmer until carrots and rice are tender.
- Chop the poblano (1/4 in) and add to the stew
- Season with garlic powder / salt / pepper to taste
- Let simmer until the chili is al dente, about 5 min.
- Serve while very hot!
