Fluffy Strawberry Cupcakes

  1. Preheat oven to 350u0b0. Line 24-cup muffin pans with paper cupcake liners; set aside.
  2. In large bowl, with electric mixer, combine all ingredients except Frosting at low speed until moistened. With mixer at medium speed, beat 2 minutes, scraping down sides. Evenly spoon batter into prepared pans.
  3. Bake 20 minutes or until toothpick inserted in centers comes out clean. Remove cupcakes to wire cooling rack and let cool completely. Evenly spread frosting on cupcakes.
  4. *Fluffy Strawberry Frosting: In large bowl, with electric mixer, beat 1/2 cup Brummel & Brown Simply Strawberry(R) Creamy Fruit Spread and 4 oz. cream cheese, softened, until smooth, scraping down sides. With mixer on low, gradually beat in 1 box (1 lb.) confectioners sugar until smooth.
  5. NOTE: To make a cake instead of cupcakes, follow package directions.
