Fluffy Strawberry Cupcakes
- 18 1/4 ounces white cake mix
- 1 1/3 cups water
- 1/2 container brummel & brown simpli strawberri creami fruit spread
- 3 egg whites
- frosting fluffy, frosting
- Preheat oven to 350u0b0. Line 24-cup muffin pans with paper cupcake liners; set aside.
- In large bowl, with electric mixer, combine all ingredients except Frosting at low speed until moistened. With mixer at medium speed, beat 2 minutes, scraping down sides. Evenly spoon batter into prepared pans.
- Bake 20 minutes or until toothpick inserted in centers comes out clean. Remove cupcakes to wire cooling rack and let cool completely. Evenly spread frosting on cupcakes.
- *Fluffy Strawberry Frosting: In large bowl, with electric mixer, beat 1/2 cup Brummel & Brown Simply Strawberry(R) Creamy Fruit Spread and 4 oz. cream cheese, softened, until smooth, scraping down sides. With mixer on low, gradually beat in 1 box (1 lb.) confectioners sugar until smooth.
- NOTE: To make a cake instead of cupcakes, follow package directions.
