Pork And Pepper Stir Fry
- 2 teaspoons canola oil
- 1 pound pork tenderloin sliced
- 1 red pepper seeded, sliced
- 1 teaspoon cumin seeds roughly crushed
- 2 cloves garlic minced
- 1 bunch green onions sliced into 1 inch pieces
- 1 teaspoon sesame oil
- 8 ounces broccoli florets blanched in boiling water for 1-2 mins, drained
- 1 tablespoon sweet chili sauce
- 4 tablespoons light soy sauce
- 10 cilantro leaves fresh
- 10 fresh basil leaves
- 8 ounces rice noodles softened in boiling water for 2-3 mins, drained
- Heat oil in a wok or frying pan. Add pork and stir-fry for 8 mins. Add pepper, cumin, garlic, green onions and sesame oil. Stir-fry for 2-3 mins. Add broccoli, chili sauce, soy sauce and 4 tbsp water. Stir-fry for 2 mins. Add herbs and noodles and toss to combine. Serve.
