Beef Barbecue
- 4 to 5 lb. chuck roast
- 3 onions
- 2 (16 oz.) cans crushed tomatoes
- 1 c. vinegar
- 1 c. sugar
- 5 tsp. sugar
- 2 tsp. salt
- Simmer,
- covered,
- until
- thick and meat falls apart (2 hours).
- Cook
- uncover
- last
- 3
- hours.
- After simmering for 2 hours,
- I
- usuallytake
- two forks and sort of shred the meat apart,
- sothat it gets kind of stringy.
- Sometimes I cut the meat
- intotarge chunks, and take one chunk at a time and put it ont plate and shred it.
- After I shred each chunk, I put it back
- in
- the
- pot and shred another chunk, until it's all shredded;
- then
- let
- it simmer for the remaining 3 hours.tt will
- thicken
- as
- it
- simmers.
- (It makes a lot and it can be frozen.)
