Beef Barbecue

  1. Simmer,
  2. covered,
  3. until
  4. thick and meat falls apart (2 hours).
  5. Cook
  6. uncover
  7. last
  8. 3
  9. hours.
  10. After simmering for 2 hours,
  11. I
  12. usuallytake
  13. two forks and sort of shred the meat apart,
  14. sothat it gets kind of stringy.
  15. Sometimes I cut the meat
  16. intotarge chunks, and take one chunk at a time and put it ont plate and shred it.
  17. After I shred each chunk, I put it back
  18. in
  19. the
  20. pot and shred another chunk, until it's all shredded;
  21. then
  22. let
  23. it simmer for the remaining 3 hours.tt will
  24. thicken
  25. as
  26. it
  27. simmers.
  28. (It makes a lot and it can be frozen.)

chuck roast, onions, tomatoes, vinegar, sugar, sugar, salt
