Spicy Sriracha-Honey Candied Bacon

  1. Preheat the oven to 375u0b0 F.
  2. Line a baking sheet with tinfoil and place a roasting rack on top. Lay another sheet of tinfoil over the rack, and poke multiple holes through it with a fork.
  3. Arrange the bacon strips onto the roasting rack.
  4. In a small microwave-safe bowl, stir together the honey and Sriracha until thoroughly combined. Transfer the bowl to the microwave. Microwave on high for 10-15 seconds, until the honey is liquified but not boiling.
  5. Brush half the honey-Sriracha glaze in a thin layer over each bacon strip. Flip the strips and spread the remaining glaze over the opposite sides.
  6. Transfer the baking sheet to the middle rack of the preheated oven
  7. Roast the bacon for 20-25 minutes, until it is deep brown and the sugar is caramelized. Cooking time will vary depending on the thickness of the bacon. Keep a close eye on it after the 20 minute mark, to ensure it does not burn.
  8. Remove the baking sheet from the oven. Transfer the bacon strips to a cooling rack or large cutting board. Allow to cool for 3 -5 minutes before serving.
