Harley Toone'S Breakfast
- 12 oz. Jimmy Dean sage sausage
- 2 1/2 oz. pepperoni
- 1 onion, diced
- 1 c. sliced mushrooms
- 1/2 c. cashew pieces
- 2 1/4 oz. can sliced olives
- 32 oz. pkg. frozen diced potatoes
- 1 1/2 c. shredded Cheddar cheese
- 1 1/2 c. shredded Monterey Jack cheese
- ground oregano
- seasoned salt
- 2 Tbsp. cooking oil
- Brown sausage in large skillet, wok or Dutch oven in oil.
- Add sliced pepperoni, onion and mushrooms.
- Cook 3 minutes.
- Add cashews and sliced olives with juice.
- Season with 2 teaspoons oregano.
- Cook until done, stirring occasionally.
- Add diced potatoes and season with seasoned salt before stirring into cooked portion.
- Cover and cook 3 to 4 minutes.
- Stir; reduce heat and spread cheese over top.
- Cover until cheese melts.
