Healthy Pineapple Quinoa
- 1 cup tricolor quinoa
- 2 tablespoons vegetable oil
- 1 egg
- 3 cloves garlic minced
- 1 onion small, diced
- 1 cup veggies mixed, carrots, peas, green beans
- 1 cup pineapple chopped
- 1 1/2 teaspoons salt
- 1 tablespoon soy sauce
- 10 shrimps peeled & deveined
- 1 pinch black pepper
- 2 cups spinach
- Rinse quinoa and cook according to package instruction
- Heat vegetable oil on a skillet over medium heat, stir in garlic until brown, add shrimps and spinach
- Beat the egg and push it to the side of the skillet until egg is scrambled & cooked.
- Add in quinoa, pineapple, mixed veggies, onion and heat through. Be careful not to mash the quinoa
- Add in salt, pepper and soy sauce. Season to taste according to your preference.
