Ratatouille
- 2 sweet red peppers
- 1 yellow onion Medium Sweet
- 2 cloves garlic
- 3 tablespoons olive oil
- 3 asian eggplants Sliced 1/8" thick
- 5 zucchini Sliced 1/8" thick
- 5 summer squash Sliced 1/8" thick
- 6 fresh thyme Springs of
- kosher salt
- Preheat over to 350 degrees
- FOR RED PEPPER SAUCEnoughly chop Red Pepper, Sweet Onion, and Garlic.nn a small saucepan on low heat, cook the Onions and Peppers for 2o minutes, add Garlic for last 5 minutes. Make sure to cook mixture low and slow to extract the most flavor.nlend mixture in a blender or with an immersion blender until sauce is smooth.neason with Kosher salt, to taste.
- FOR ASSEMBLYnn an oven safe baking dish place 1/4" of sauce on bottom of the dish.nine baking dish alternating Zucchini, Squash, Eggplant.nop with sprigs of Thyme.nprinkle lightly with Kosher Salt.
- Bake for 20-25 minutes.
