Asian Ground Beef With Sweet Chili Slaw
- 2 green onions cut into matchsticks
- 1 tablespoon vegetable oil
- 1/2 red onion small, finely chopped
- 10 ounces lean ground beef
- 1 clove garlic crushed
- 2 tablespoons soy sauce
- 2 tablespoons sesame seeds toasted
- 1/2 small carrot cut into matchsticks
- 1 1/2 cups red cabbage core removed, shredded
- 2 tablespoons lemon juice
- 1 tablespoon sweet chili sauce plus extra, to serve
- 1 red chili fresh long, thinly sliced
- 3 tablespoons chopped cilantro
- 1/2 iceberg lettuce small, cut in half crosswise
- Place green onion in a small bowl of iced water. Let stand for 10-15 minutes or until curled. Drain.
- Meanwhile, heat oil in a wok or large frying pan over moderate heat. Add red onion and cook for 2-3 minutes until softened slightly. Add the ground beef and cook, stirring with a wooden spoon to break up lumps, for 2-3 minutes or until browned. Add garlic and soy sauce. Remove from heat. Stir in sesame seeds.
- In a large bowl, combine carrot, cabbage, juice, chili sauce, chili, cilantro and beef mixture. Place lettuce on serving plates. Top with cabbage mixture. Top with green onion. Serve with extra sweet chilli sauce.
