Beef Strips Oriental
- 1 lb. good top round or sirloin, cut into 1/4 to 3/4-inch strips
- hot vegetable oil
- 1 c. water
- 2 Tbsp. soy sauce
- 1 garlic clove, minced
- 1 c. diagonal carrot slices
- 1 c. diagonal celery slices
- 2 c. mushroom halves (1/2 lb.)
- 2 Tbsp. cornstarch
- 1/4 c. cold water
- 1/2 c. grated Parmesan cheese
- Brown meat in oil; drain.
- Add 1 cup water, soy sauce and garlic to drippings.
- Cover and simmer 5 minutes.
- Add carrot, celery and mushrooms.
- Cover and continue cooking 15 to 20 minutes.
- Combine the cornstarch and cold water and blend well. Gradually add cornstarch mixture to hot meat and vegetables. Stir constantly until mixture boils and thickens.
- Remove from heat and stir in cheese.
- Serve over hot, cooked rice.
