Lasagna Soup
- 1 pound ground beef
- 1 green pepper chopped
- 1 onion chopped
- 4 cloves garlic minced
- 14 1/2 ounces diced tomatoes undrained
- 8 ounces tomato sauce
- 1/4 cup tomato paste
- 1 can corn undrained
- 1 can cannellini beans undrained
- 3 cups water
- 2 tablespoons beef bouillion
- italian seasoning to taste
- black pepper to taste
- salt to taste
- 2 1/2 cups pasta uncooked, choice
- 1/2 cup cheese or more, choice for topping, do not omit ;
- Italian breadcrumbs not necessary
- Brown beef in large pot with onion and green pepper.
- Add garlic and cook an additional 1 minute.
- Add diced tomatoes, tomato paste, tomato sauce, corn, beans, water, bouillon, and seasonings. (Everything but the cheese and pasta.) Cook for 10 minutes.
- Add pasta and cook until tender, 10-15 minutes.
- Put into bowls and top with cheese(and breadcrumbs if you have them). I use a Pecorino Romano and Parmesan mix. It's just a staple that I keep but I'm sure it would be delicious with cheddar or taco mix cheese, whatever you have really. Enjoy!
