Asian Noodle Chicken Salad
- 1 pound chicken grilled then cubed
- 1 English cucumber sliced
- 1/2 head red cabbage thinly sliced
- 1/2 head green cabbage thinly sliced
- 1 carrot shredded
- 1 orange pepper sliced
- 1 red pepper sliced
- 1 package linguine cooked
- 2 limes
- 1/2 cup low sodium soy sauce
- 1/4 cup olive oil
- 1/4 cup sesame oil
- 2 tablespoons brown sugar
- 2 tablespoons Sriracha
- 2 cloves garlic minced
- Prep before hand grilling the chicken and cooking the linguine and let it cool down before serving
- In a medium bowl whisk together all the wet ingredients until combined. Toss in the linguine and mix around until coated. In a large serving bowl add the linguine and sauce, veg and chicken. Give it a good toss to really combine everything and serve.
- This dish is best served cold and is almost better the second day. I grazed on this salad for a good full day after we had it for dinner one night. Feel free to add more fresh veggies such as pea pods, water cress, edamame, tomatoes, etc.
