Cod With Leeks And Potatoes
- 9/16 pound cod
- 2 leeks thin
- 2/3 pound potatoes cooked and peeled
- 1/2 tablespoon lemon juice
- pepper Freshly grounded
- 1 tablespoon dry white wine
- 1 tablespoon wholegrain mustard
- 4 tablespoons Flora Original pro.activ
- Cook the potatoes, clean the leeks and cut into thin rings.
- Divide the leeks over the bottom of the oven dish.
- Rub the cod with lemon juice, pepper and place the fish on the leeks.
- Sprinkle the white wine and 1 tbsp of water over it.
- Preheat the cod approximately 6-8 minutes in the microwave at 600 watts.
- Pre-heat a saucepan for shallow frying . Add 2 tbsp of pro-activ and shallow fry until the potatoes are nicely coloured. Add pepper and salt to taste.
- Pour the liquid from the fish in a bowl. Beat the mustard and Flora pro.activ with a whisk until a nice light sauce exists. Add some pepper to taste.
- Divide the cod, the baked potatoes and the leeks on to serving plates. Spoon over the sauce.
