Escarole Pie
- 1 head escarole roughly chopped
- 1 cup extra-virgin olive oil
- 1/2 pound black olives
- 1 onion medium
- 1/4 pound jack cheese Spicey Montery, medium sliced
- 1/4 pound cheese Sharp provlone
- 1/2 pound sausage Sweet
- 1 tablespoon oregeno Fresh
- 1/2 cup grated cheese Locatelli
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 whole wheat dough
- 1 egg lightly beaten
- Saute 2 tablespoons of Extra virgin olive oil and onion until onion is lightly brown add escarole, olives, oregeno, salt and pepper cook for 15 minutes or until escarole is tender
- Remove from skillet. Brown Sausage in same pan add remaining olive oil when sausage is browned add the escarole mixture and add the locatelli grated cheese. Mix all together.
- Roll out whole wheat dough layer the cheese spread the mixture on top and roll the dough closed. Brush the lightly beaten egg on top and put in a 400 degree oven for 1/2 hour on the bottom rack after 15 minutes place on the middle rack. Remove when top and bottom are golden brown
