Turkey Rice Bake
- 1 can cream of mushroom soup
- 1/2 c. milk
- 1 1/2 tsp. dried thyme, crumbled
- 1/2 tsp. lemon juice
- 1/4 tsp. pepper
- 2 c. diced, cooked turkey
- 2 c. brown or white cooked rice
- 1 (10 oz.) pkg. frozen broccoli spears, thawed and drained
- 2 tsp. oleo
- 1/4 c. seasoned dry bread crumbs
- 1 Tbsp. Parmesan cheese
- Preheat oven to 350u0b0.
- Combine soup, milk, thyme, lemon juice and pepper in a large mixing bowl; set aside 1/2 cup of mixture. Add turkey and rice to mixture in bowl and toss well to mix. Lightly coat an 8 x 8 x 2-inch pan with cooking spray.
- Spoon turkey mixture into the dish.
- Arrange the broccoli on top.
- Pour the reserved 1/2 cup of soup mixture evenly over all.
