Grilled Fried Bologna Sandwich

  1. Make 3 little slices around your bologna, from the middle out. Each slice should be about 1 1/2 inch long. This is so that the bologna does not shrink up and it cooks in the middle.
  2. Melt the butter in a non-stick skillet.
  3. Add the bologna in a single layer so that most of the surface is touching the pan. Cook on medium high heat until browned on both sides, maybe 5 minutes total.
  4. While the bologna is frying, spread butter onto all 4 slices of the bread. Remove the bologna from the pan. Wipe out your non-stick skillet and melt 1 tablespoon of butter in the pan. Place one two pieces of the bread, butter side down in the pan. Top them both with the fried bologna and then place the cheese on top of the bologna. Put the remaining slices of bread on top with the butter side up.
  5. Cook over medium heat about 3 - 4 minutes on each side until the bread is toasty and brown and the cheese is melted.
  6. Remove from the pan and serve while the cheese is warm and melty.
