Orange Lentils Soup
- 2/3 pound orange lentils
- 2 onions chopped
- 2 olive oil table spoons
- 6 cups chicken stock / water
- 1 parsley stalk
- 2 bay leafs
- 2/3 cup tomato purree
- 1 sweet paprika table spoon
- paprika A pinch of spicy
- salt
- Rinse the lentils well
- Heat the oil in a medium sized pot, add the onions and cook until onions are translucent.
- Add the lentils, and keep on cooking while stirring for a minute.
- Add the chicken stock/water and bring to a boil.
- Knot the parsley& bay leafs together and add to the pot. nower the heat to medium, cover the pot and cook for 20 minutes.
- When the lentils are soft, take out the parsley and bay leafs.
- Add the tomato purree, the spices and the salt& pepper. Stirr and continue to cook for another 15 minutes. nhen serve to the table and enjoy :)
