Garden Marinara
- 9 Roma tomatoes peeled
- 2 carrots sliced
- 1 onion large, chopped
- 1 bell pepper chopped
- 16 ounces mushrooms sliced
- 6 cloves garlic diced
- 1/2 cup olive oil
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- pepper
- 2 teaspoons red pepper flakes
- Saute carrots, onion, and bell pepper in olive oil for about 10 minutes, adding more oil when needed.
- Add mushrooms and saute for 5 minutes.
- Add garlic and continue cooking for 1 minute.
- Crush tomatoes with hands into veggies, season with basil, oregano, red pepper, and salt & pepper, and bring to a low boil. Add remainder of olive oil. Simmer for an hour or when you get too hungry to wait any longer, stirring occasionally and smashing the tomatoes more and more with a wooden spatula.
- Enjoy with pasta, meatballs, and/or cheese!
