Pomelo Salad ( Yam Som Oo )
- 1 tablespoon garlic thinly sliced, gently fried for a couple of minutes
- 1 tablespoon sliced shallots thinly, gently fried for a couple of minutes
- 2 tablespoons grated coconut roasted
- 5/8 cup pomelo segments, skinned and broken up finely
- shrimps Handful of cooked
- 1 teaspoon red chillies chopped
- 1 tablespoon roasted peanuts chopped
- 2 tablespoons coriander leaves shredded
- 1/2 cup coconut milk
- 2 teaspoons palm sugar grated
- 1 tablespoon fish sauce
- 2 tablespoons lime juice
- 2 teaspoons jam Roast chilli, /paste
- To make the sauce , combine all the sauce ingredients in a pan and bring to the boil, allow to simmer for 10 mins then set aside to cool.
- Mix all the other ingredients together in a bowl.Then add the sauce , tbsp spoon by tbsp spoon until you have the consistency and taste you prefer.
