Seafood Curry
- 1 cup onions medium
- 1 cup carrots medium
- 1 cup celery
- 2 teaspoons garlic crushed
- 4 tablespoons butter
- 1 cup flour plain
- 1 tablespoon curry powder
- 1 teaspoon ginger ground
- 1 teaspoon salt
- 2 cups chicken stock
- 1 cup cream
- 1 kilogram marinara
- 2 tablespoons lemon juice
- Peel and dice onion, carrot and celery.
- Saute onion, carrot, celery and garlic in butter over low heat until soft. Stir in flour, curry powder, ginger, and salt; add chicken broth and cream, blend, and cook until thickened, stirring occasionally.
- Add seafood and lemon juice and cook gently for 5 minutes. Do not allow to boil. Correct seasonings and add more curry powder if you like it hot.
- Serve over hot cooked rice.
