Easy Vietnamese Pho
- 6 cups beef stock
- 1 lime juiced
- 2 tablespoons fish sauce + extra to serve
- 2 star anise
- 2 cardamom pods optional
- 7 ounces rice noodles
- 1 pound beef tenderloin sliced very thinly
- 4 ounces bean sprouts
- 1/2 bunch cilantro leaves fresh, picked
- 1/2 bunch fresh basil leaves
- 2 spring onions thinly sliced
- 1 red chili long, thinly sliced
- fried shallots to serve
- lime wedges to serve
- In a large saucepan, combine stock, lime juice, fish sauce, star anise and cardamom. Bring to a boil, reduce heat and simmer for 5 mins.
- Meanwhile, prepare noodles following package instructions. Drain well.
- Divide noodles between serving bowls. Top with raw beef slices, bean sprouts, herbs, spring onion and chili. Ladle hot stock over top and sprinkle with fried shallots. Serve with fish sauce and lime wedges.
