Chilorio

  1. Place the Guajillo chilies in a bowl with water. Soak overnight.
  2. In a pressure cooker, add the pork, 1/4 onion, 1 clove of garlic, and bay leaf. Add enough water to cover the meat.
  3. Once it is cooked, shred the meat.
  4. In a saucepan, heat the oil and fry the meat.
  5. In a blender, add the chilies, 1/4 onion, 6 cloves of garlic, vinegar, and salt to taste. Puree until smooth.
  6. Pour the sauce over the meat. Add vegetable oil if needed.
  7. Season with salt, add the cumin and pepper, and, if needed, add a pinch of sugar. Continue to cook.
  8. Serve on tortillas to make tacos.
