Chilorio
- 17 guajillo chilies seeded and deveined
- 1 kilogram pork meat
- water
- 1/2 onion
- 7 cloves garlic
- bay leaf
- 1/2 cup vegetable oil
- 1/2 cup apple vinegar
- salt
- 4 tablespoons cumin
- 1 tablespoon ground black pepper
- sugar
- Place the Guajillo chilies in a bowl with water. Soak overnight.
- In a pressure cooker, add the pork, 1/4 onion, 1 clove of garlic, and bay leaf. Add enough water to cover the meat.
- Once it is cooked, shred the meat.
- In a saucepan, heat the oil and fry the meat.
- In a blender, add the chilies, 1/4 onion, 6 cloves of garlic, vinegar, and salt to taste. Puree until smooth.
- Pour the sauce over the meat. Add vegetable oil if needed.
- Season with salt, add the cumin and pepper, and, if needed, add a pinch of sugar. Continue to cook.
- Serve on tortillas to make tacos.
