Beet And Feta Cheese Tortilla
- olive oil
- 1/2 onion
- 1 beet roasted
- 1 sprig parsley
- salt to taste
- pepper to taste
- seasoning
- garlic
- 3 eggs
- 1 piece feta cheese to taste
- dried dill
- Preheat oven to 190 degrees Celsius.
- In a non-stick frying pan, heat a little bit of olive oil. Add the onion, and brown a little on low heat.
- Add the sliced, roasted beets (just wrap them in aluminum foil, without peeling, and bake for about an 1 1/2 hours at 200 C. Peel after cooling).
- Add the chopped parsley, and season with salt, pepper, and the garlic and herb seasoning. Set aside.
- In a bowl, whisk the eggs with a fork, and spread them over the beets.
- Crumble the feta cheese on top, and sprinkle with dill.
- Cook on low heat until bubbling.
- Place the skillet in the oven until the eggs finish cooking.
- Do the toothpick test in the center of the tortilla.
- Serve with green salad.
