Beet And Feta Cheese Tortilla

  1. Preheat oven to 190 degrees Celsius.
  2. In a non-stick frying pan, heat a little bit of olive oil. Add the onion, and brown a little on low heat.
  3. Add the sliced, roasted beets (just wrap them in aluminum foil, without peeling, and bake for about an 1 1/2 hours at 200 C. Peel after cooling).
  4. Add the chopped parsley, and season with salt, pepper, and the garlic and herb seasoning. Set aside.
  5. In a bowl, whisk the eggs with a fork, and spread them over the beets.
  6. Crumble the feta cheese on top, and sprinkle with dill.
  7. Cook on low heat until bubbling.
  8. Place the skillet in the oven until the eggs finish cooking.
  9. Do the toothpick test in the center of the tortilla.
  10. Serve with green salad.
