Penne With Black Kale, Gorgonzola, And Walnuts

  1. Remove kale leaves from stem and wash. Cut into medium sized pieces. Heat a large pot of salted boiling water, and cook the kale for 7 minutes. Drain.
  2. Cook the noodles.
  3. Pour a tablespoon of oil in a frying pan, add the garlic (unpeeled just crushed under a knife's blade), add kale, and fry for 4 to 5 minutes, season with salt. When the pasta is cooked, add to frying pan, stir, and cook for 2 to 3 minutes, add the walnut pieces.
  4. Serve the noodles on plates, sprinkle with crumbled Gorgonzola, lemon zest, a little olive oil, and pepper.
