Penne With Black Kale, Gorgonzola, And Walnuts
- 10 stems black kale
- 10 1/2 cups noodles whole-wheat penne, cooked
- 7 1/8 tablespoons gorgonzola cheese
- 3 7/8 tablespoons walnuts
- 1/2 lemon zest organic
- olive oil
- 1 garlic clove
- Remove kale leaves from stem and wash. Cut into medium sized pieces. Heat a large pot of salted boiling water, and cook the kale for 7 minutes. Drain.
- Cook the noodles.
- Pour a tablespoon of oil in a frying pan, add the garlic (unpeeled just crushed under a knife's blade), add kale, and fry for 4 to 5 minutes, season with salt. When the pasta is cooked, add to frying pan, stir, and cook for 2 to 3 minutes, add the walnut pieces.
- Serve the noodles on plates, sprinkle with crumbled Gorgonzola, lemon zest, a little olive oil, and pepper.
