Creamy Chicken Pasta With Bacon, Peas And Spinach
- 1 tablespoon olive oil
- 6 ounces bacon chopped
- 1 onion peeled and chopped
- 4 1/2 ounces frozen peas
- 3/4 cup heavy cream
- 1/2 cup chicken stock
- 1/2 rotisserie chicken small, shredded
- 3 1/2 ounces baby spinach
- 2 ounces Parmesan cheese finely grated
- 13 ounces fusilli or other pasta
- Heat oil over high heat, add bacon and onion and cook for 4-5 mins or until onion is tender. Add peas, cream and chicken stock. Bring to a boil, stirring. Reduce heat and simmer for 4-5 mins, or until reduced and slightly thickened. Season. Add chicken, spinach and Parmesan.
- Meanwhile, cook pasta in boiling water according to package instructions. Drain then toss with sauce and serve.
