Okra Tomato Gumbo
- 3 slices bacon
- 1/2 lb. round steak, thinly sliced
- 2 medium onions, coarsely chopped
- 4 c. stewed tomatoes
- 1 qt. water
- 1 qt. chicken broth
- 2 beef bouillon cubes
- 1 (10 oz.) pkg. frozen lima beans
- 1 (10 oz.) pkg. frozen okra, sliced
- 1/2 c. cooked, diced ham
- 1 c. cooked, diced chicken
- 1 c. tiny cooked shrimp
- 1 can yellow whole kernel corn, drained
- salt and pepper to taste
- hot pepper sauce
- Fry
- bacon
- until
- crisp;
- remove, leaving drippings in Dutch oven. Reserve bacon to add to finished gumbo.
- Add round steak slices
- and
- brown
- slowly,
- adding onions toward end of process. Add
- tomatoes
- with
- juice, water, chicken stock and bouillon cubes;
- simmer
- 1 hour or more.
- Add frozen limas and cook 20 minutes.
- Add sliced okra, ham and chicken.
- Simmer 20 minutes. Just before serving, add the shrimp and drained corn and
- heat thoroughly.
- Taste
- and adjust seasoning with salt, pepper
- and pepper
- sauce.
- Serve in large shallow bowls with cornbread or cheese biscuits.
- Makes 5 quarts.
