Okra Tomato Gumbo

  1. Fry
  2. bacon
  3. until
  4. crisp;
  5. remove, leaving drippings in Dutch oven. Reserve bacon to add to finished gumbo.
  6. Add round steak slices
  7. and
  8. brown
  9. slowly,
  10. adding onions toward end of process. Add
  11. tomatoes
  12. with
  13. juice, water, chicken stock and bouillon cubes;
  14. simmer
  15. 1 hour or more.
  16. Add frozen limas and cook 20 minutes.
  17. Add sliced okra, ham and chicken.
  18. Simmer 20 minutes. Just before serving, add the shrimp and drained corn and
  19. heat thoroughly.
  20. Taste
  21. and adjust seasoning with salt, pepper
  22. and pepper
  23. sauce.
  24. Serve in large shallow bowls with cornbread or cheese biscuits.
  25. Makes 5 quarts.
