Almond Cookies
- 1 lb. almonds
- 1 lb. butter or margarine
- 3/4 c. sugar
- 1 tsp. almond or vanilla extract
- 1 tsp. baking powder
- approximately 5 to 6 c. flour
- confectioners sugar
- Preheat oven to
- 350u0b0.tlanchtlmonds
- in
- water; add baking soda to remove skin.
- Put in blender a little at a time tothop very
- fine.
- Mix
- almonds,tuttertnd
- sugar
- until smooth.
- Add extract and baking powder.tix flour into batter a little at a time until mixture is easy to work with by hand. Shape into 1 inch balls and flatten into crescent shape.
- Bake on cookie sheet until light
- brown
- on bottom, about 10 to 12 minutes.
- Cool cookies, then coat with powdered sugar.
- Store in airtight container.
- Can be frozen for storage.
