Mediterranean Vegetable Bruschetta
- 4 tablespoons promise buttery spread
- 1 zucchini large, diced
- 1 onions
- 1 loaf whole wheat baguette seeded, cut into 1/2-inch slices
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons loosely packed fresh basil leaves thinly sliced
- 1 tomatoes medium, diced
- 1/4 teaspoon salt
- 1 1/2 teaspoons garlic powder
- Preheat oven to 350u0b0. Microwave 3 tablespoons Promise(R) Buttery Spread with garlic powder at HIGH 20 seconds or until melted in small microwave-safe bowl or glass measure. Evenly brush onto one side of each bread slice. Arrange bread slices on baking sheet; bake 7 minutes or until toasted; set aside.
- Melt remaining 1 tablespoon Spread in 10-inch nonstick skillet over medium-high heat and cook onion and zucchini, stirring occasionally, 6 minutes or until tender. Stir in tomato and salt. Cook, stirring occasionally, 3 minutes or until tomatoes are tender. Remove from heat and stir in cheese and basil.
- To serve, evenly top each bread slice with 1 tablespoon vegetable mixture.
