Soup Minestrone
- 1 tablespoon olive oil
- 1 onion small, chopped
- 2 carrots cut in cubes
- 2 leeks cut into rings
- 1 celery stalk thinly sliced
- 1/2 cabbage a small, cut in small pieces
- 1 handful white beans soaked in water the night before
- salt
- black pepper
- 3 1/2 ounces pasta I use barilla ditalini
- 1 tablespoon chopped parsley
- Heat olive oil in a large saucepan and add the onion,carrots, leak, celery. Leave them like this for 3 minutes and add the cabbage, beans, half a liter of water, salt and pepper and let it simmer for about an hour.
- With a pierced spoon take off the beans and mash them in a mixer with the cups of the broth. Add the mash bean again in the saucepan, add the pasta and some water. Taste it to see if you like some extra salt and let it simmer till pasta is ready.
- Finally, add the parsley, serve the soup with some toasted bread or rusks.
