Chicken Minestrone

  1. Blanch green beans in boiling salted water. Drain. Cook pasta until al dente. Drain.
  2. Meanwhile, heat oil in a large saucepan and saute chicken for 2 mins per side. Season then add onion and tomato paste and cook for 3-4 mins. Add stock, carrot, broccoli and tomatoes. Bring to a boil, cover then simmer for 10 mins. Remove chicken, dice then return to pan. Add pasta and beans. Serve with parsley and pesto.
