Chicken Minestrone
- 1/4 pound green beans roughly chopped
- 2 ounces small pasta
- 1 teaspoon oil
- 5 1/4 ounces chicken breast
- 1 onion medium, finely diced
- 1 teaspoon tomato paste
- 3 cups chicken stock
- 1 medium carrot peeled and diced
- 1/2 pound broccoli cut into florets
- 5 tomatoes coarsely chopped
- 3 sprigs fresh parsley chopped
- 2 teaspoons pesto store-bought
- Blanch green beans in boiling salted water. Drain. Cook pasta until al dente. Drain.
- Meanwhile, heat oil in a large saucepan and saute chicken for 2 mins per side. Season then add onion and tomato paste and cook for 3-4 mins. Add stock, carrot, broccoli and tomatoes. Bring to a boil, cover then simmer for 10 mins. Remove chicken, dice then return to pan. Add pasta and beans. Serve with parsley and pesto.
