Christmas Steamed Pecan Cakes
- 3/4 lb. butter
- 1 c. white sugar
- 6 eggs
- 1 tsp. baking powder
- 3 oz. lemon extract
- 1 lb. brown sugar (light)
- 1 lb. flour
- 1 lb. pecans
- 1 lb. raisins and dates
- pinch of salt
- Cream butter and sugar in large mixing bowl; add egg yolks and beat well.
- In separate bowl, combine pecans and raisins and mix in about 1 cup of flour to coat.
- Add baking powder and salt to remaining flour.
- Gradually add flour to creamed sugars, butter and egg mixture, a cup at a time.
- Alternate with lemon extract until all flour and extract have been used.
- Then mix in pecans and raisins; stir well.
- (May take two mixing bowls to mix properly.) Beat egg whites until stiff peaks form.
- Fold into batter mixture.
