Christmas Steamed Pecan Cakes

  1. Cream butter and sugar in large mixing bowl; add egg yolks and beat well.
  2. In separate bowl, combine pecans and raisins and mix in about 1 cup of flour to coat.
  3. Add baking powder and salt to remaining flour.
  4. Gradually add flour to creamed sugars, butter and egg mixture, a cup at a time.
  5. Alternate with lemon extract until all flour and extract have been used.
  6. Then mix in pecans and raisins; stir well.
  7. (May take two mixing bowls to mix properly.) Beat egg whites until stiff peaks form.
  8. Fold into batter mixture.
