Portobello Mushrooms Stuffed With Yellow Zucchini, Chorizo, And Philadelphia Cream Cheese
- 12 portobello mushrooms
- 1 yellow zucchini
- 2 13/16 ounces chorizo
- 1/2 onion
- 1 tablespoon philadelphia cream cheese
- 3 tablespoons Parmesan cheese grated
- Preheat oven to 180 degrees Celsius.
- Wash the mushrooms, remove the stems.
- In the mixer, chop the yellow zucchini, chorizo, and onion.
- In a pan. fry the chorizo, add the zucchini and onion and cook for 5 to 7 minutes.
- Towards the end of the cooking time, add Philadelphia Cream Cheese and 2 tablespoons of Parmesan cheese.
- Stuff the mushrooms, add a little grated Parmesan on each mushroom.
- Cook 15 minutes.
- Serve with mesclun type salad.
