Caramel-Filled Chocolate Cookies
- 2 1/2 c. flour
- 3/4 c. unsweetened cocoa
- 1 tsp. baking soda
- 1 c. sugar
- 1 c. firmly packed brown sugar
- 1 c. butter
- 2 tsp. vanilla
- 2 eggs
- 1 c. chopped pecans
- 48 Rolo chewy caramel
- 1 tsp. sugar
- 4 oz. white chocolate
- In a small bowl, combine flour, cocoa and baking soda.
- In large bowl, beat 1 cup sugar, brown sugar and butter until fluffy. Add vanilla and eggs and beat well.
- Add flour mixture and blend well.
- With floured hands, shape about 1 tablespoon of dough around 1 Rolo caramel candy, for each cookie.
- In small bowl, combine nuts and sugar.
- Press one side of cookie in mixture. Place this side up and bake at 375u0b0 for 7 to 10 minutes.
- Drizzle melted white chocolate over cookies.
