Pork Loin With Peach Puree & Mushroom Side
- pork loin chop
- olive oil
- peach
- Orange
- red wine vinegar
- salt
- pepper
- mushrooms
- green onion
- Preheat oven to 375 degrees F
- Pan sear all sides of your pork in a frying pan with olive oil until brown, about a minute on each side.
- Place pork in oven for 15-20 minutes, or until internal temperature reaches 165 degrees F
- Cut into slices.
- Place in a food processor, blender or magic bullet: cut-up peach, orange juice and vinegar. If you don't have red wine vinegar, you can substitute red wine and regular vinegar.
- Blend well. The mixture will be quite liquidy.
- Sautee mixture on medium-high for about 8 minutes or until sauce thickens to a puree consistency.
- Place on top of sliced pork
- Sautee in a frying pan: mushrooms, olive oil and green onion slices for about 10-15 minutes or until well cooked.
- Serve as a side to the pork.
