Buckwheat Cookies

  1. Beat the butter with the sugar, then add the egg and next, add the two types of flour sifted with the baking powder.
  2. Knead quickly, then shape the dough into a ball, cover it in plastic wrap and refrigerate it for at least one hour.
  3. Roll out the dough with a rolling pin, sprinkle it with the raw sugar and then roll the rolling pin over the dough for the sugar to adhere well to the sheet of dough.
  4. Use a cookie cutter of your choice to cut out the cookies.
  5. Place the cookies on a wax paper lined cookie sheet and bake at 180C for approximately 20 minutes.
  6. Remove the cookies from the oven and cool on a wire rack.
