Buckwheat Cookies
- 1 2/3 cups buckwheat flour
- 3/4 cup flour
- 9/16 cup salted butter
- 1 cup raw sugar
- 1 egg
- 1/2 teaspoon baking powder
- raw sugar for sprinkling
- Beat the butter with the sugar, then add the egg and next, add the two types of flour sifted with the baking powder.
- Knead quickly, then shape the dough into a ball, cover it in plastic wrap and refrigerate it for at least one hour.
- Roll out the dough with a rolling pin, sprinkle it with the raw sugar and then roll the rolling pin over the dough for the sugar to adhere well to the sheet of dough.
- Use a cookie cutter of your choice to cut out the cookies.
- Place the cookies on a wax paper lined cookie sheet and bake at 180C for approximately 20 minutes.
- Remove the cookies from the oven and cool on a wire rack.
