Meat-Stuffed Peppers With Gorgonzola Sauce
- vegetable oil
- 1 garlic clove peeled and minced
- 1/2 onion peeled and minced
- 1/2 leek diced
- 7 ounces ground beef
- 1 tablespoon tomato sauce
- salt
- 4 roasted red bell peppers seeded
- 6 3/4 tablespoons heavy cream
- 5 15/16 tablespoons gorgonzola cheese
- Start by sauteing together the garlic, onion, and leek.
- Once softened, add the ground beef and slowly simmer 5 minutes.
- Right before the beef finishes cooking, add the tomato sauce. Salt to taste.
- Remove from heat and set aside to cool.
- Once the filling has cooled, carefully stuff the peppers.
- For the sauce, in a saucepan set the heavy cream and gorgonzola cheese to melt on low heat.
- Plate the stuffed peppers with the sauce on top.
